On Saturday 9 March 2024, De Lambikstoempers vzw visited Antidoot in Kortenaken. We were given an expert tour with extensive tasting by Tom Jacobs, in undoubtedly both the most innovative and the most artisanal and natural brewery in the region.
Antidoot explores all aspects of wild fermentation and converts them into a range of special drinks, not only beer, but also naturally fermented cider and wine, which are often cross-brewed with each other and require a hugely long production time.
Many ingredients come from their own garden, including natural ferments and their own house culture, a culture of wild yeasts they grow themselves from flowers and fruits from the garden. The garden is part of the whole and almost as important as the brewery, with various berry bushes, fruit trees, edible herbs and flowers and an in-house vineyard.
